- 4 cups cooked white rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 cup diced cooked chicken
- 1 cup frozen peas and carrots, thawed
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 large eggs, beaten
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken, peas, carrots, green onions, and garlic, and cook for 2-3 minutes until heated through.
